Ingredients
  

  • 14 ounces extra-firm tofu pressed and cut into 3/4-inch cubes
  • 8 ounces cremini mushrooms sliced
  • 4 ounces shiitake mushrooms stemmed and sliced (optional)
  • 1 medium red bell pepper thinly sliced
  • 3 tablespoons neutral oil divided
  • 3 garlic cloves minced
  • 1 tablespoon fresh ginger grated
  • 3 tablespoons low-sodium soy sauce
  • 1/4 cup low-sodium vegetable broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar or maple syrup
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon cornstarch for slurry + 2 teaspoons water
  • 2 green onions sliced, for garnish
  • Lime wedges for serving optional

Equipment

  • 1 12-inch heavy skillet (cast-iron or stainless steel)
  • 1 Cutting board and chef's knife
  • 1 Small bowl for sauce and cornstarch slurry
  • 1 Paper towels or clean kitchen towel for pressing tofu

Method
 

Prepare and press tofu
  1. Remove tofu from package, wrap in a clean kitchen towel or paper towels, and press under a heavy skillet or books for at least 10 minutes to remove excess moisture.
Make the sauce
  1. In a small bowl whisk together soy sauce, vegetable broth, rice vinegar, brown sugar, and sesame oil; set aside. In a separate small bowl dissolve 1 teaspoon cornstarch in 2 teaspoons water and set the slurry aside.
Brown the tofu
  1. Heat 2 tablespoons oil in a 12-inch skillet over medium-high heat until shimmering. Add tofu in a single layer without crowding and cook undisturbed 3–4 minutes per side until deeply golden; you may need two batches. Remove browned tofu to a plate and keep warm.
Cook mushrooms and vegetables
  1. Add the remaining 1 tablespoon oil to the hot skillet. Add mushrooms in a single layer and let sear 2–3 minutes without stirring, then stir and add bell pepper and a pinch of salt. Cook 1–2 minutes until vegetables begin to brown. Push vegetables to the side and add garlic and ginger; cook 20–30 seconds until fragrant.
Combine and finish
  1. Return tofu to the pan, stir the sauce, and pour over the tofu and vegetables. Bring to a simmer, then slowly stir in the cornstarch slurry. Cook 30–60 seconds until the sauce thickens and becomes glossy. Remove from heat and sprinkle with sliced green onions and a squeeze of lime if using.
Serve
  1. Serve immediately over steamed rice or noodles.

Notes

Press tofu at least 10 minutes to remove excess water for better browning. Brown tofu and mushrooms in single layers to avoid steaming; if doubling the recipe, work in batches. Store leftovers in an airtight container for up to 3 days and reheat gently in a skillet with a splash of broth.
